Make the sauce. Melt the butter with the sugar in a small saucepan. Add the cream and bring to boil and boil 1–2 minutes, then set aside to cool slightly. Stir in a pinch of salt.
Toss apples in lemon or lime juice. Mix the sugar and cinnamon together and sprinkle over the fruit. Toss again to coat. Thread the apple wedges onto 4 skewers.
When ready to serve, grill the apple skewers on the barbecue or under a hot grill for about 5-15 minutes turning and basting with a little melted butter until just tender
If required, gently reheat the sauce. Serve the apple skewers with the sauce drizzled over.
