Looking for some delicious chicken dishes? It time for another #CookBlogShare and this week I'm sharing some great chicken recipes that were linked up to last week #CookBlogShare. From an easy one pan tray bake to a tasty pasta dish and more there is something for everyone.
It doesn't seem like four weeks ago when I was writing the last #CookBlogShare linky on Recipes Made Easy, and the time has flown by. At the time I was looking forward a trip to Barcelona with some girl friends and now the trip has been and gone, as has Easter, in so many ways it seems like ages ago. I had an amazing time in Barcelona and the trip inspired my two baking posts last week. Friends in The Kitchen - Edith's Pogacsa and a delicious Catalan Pastry Coca de Vidre.
This week I am in Suffolk where I have three little cottages, two of which I rent out as holiday lets and our original one which is a bit of a building project just now. I am very lucky to be able to enjoy both the city life of London and the delights of the rural coastal countryside of Suffolk on a regular basis. But it is not all relaxing and enjoying walks by the sea! The cottages come with a lot of garden. Now I love gardening, but the weather so far this year has been pants. Last autumn I started renovating one of the gardens which is planted in a traditional cottage garden style but some of the more thuggish perennials were taking over and it was no longer looking at its best. The wet cold spring means I am running very behind and so, as the weather has improved and is predicted to be warm this week, I decided to bring my laptop to Suffolk and spend a whole week here, getting out into the garden as much as possible and hopefully getting on top of that garden renovations so it looks good when the summer guests arrive .
Great Chicken Dishes
The #CookBlogShare linky continues to go from strength to strength. As per usual I had lots of lovely dishes to choose from from last weeks linky including some fabulous cakes. I really liked the look of Something Sweet Something savoury's Blood Orange Olive Oil Cake and the rather spectacular Ultimate Marble Cake from The Baking Explorer. However as my last two posts were baking posts I have decide to showcase the delicious chicken dishes linked up last week.
Chicken and Ham Hock Filo Pie
This Chicken and Ham Hock Filo Pie from Curly's Cooking, caught me eye because I am really like using ham hock. Its a really cheap cut that I can get from my local butchers here in Suffolk. Cat aka Curly has made this pie with filo pastry so that it is lower fat and less heavy than a pie made with shortcrust pastry. It looks delicious to me.
Spanish Style Chicken Tray Bake
Eb from Easy Peasy Foodie has done it again coming up with a super easy to make chicken dish baked in one tin, These one pan dinners are a bit of a specialty of Eb's and this Spanish Style Chicken Tray Bake is a great example. Pieces of chicken cooked with potatoes, onions, tomato and chorizo this dish will be packed with flavour. I can imagine eating this alfresco over the coming months and dreaming I am back in Spain.
Chicken and Sun-dried Tomato Pasta with Mozzarella Sauce
The Not So Creative Cook's Chicken and Sun-dried Tomato Pasta with Mozzarella Sauce, has an Italian feel. A simple pasta dish with a creamy white sauce, spinach and sundried tomatoes added to the chicken, This would make a fabulous midweek meal.
Chicken with Artichokes
Artichokes seem to be a bit of a love them or hate them vegetable, For me the jury's out but I know I need to cook with them more often. This Chicken with Artichokes from Pionsettia Drive is served on a bed of Orzo pasta.

I know what you mean I too love living in London. MOst of my friends there dont have any garden but I do have a small 4x4m garden in London too so very lucky, The cottage is garden is very different when Im there I spend most of my time outdoors.

We have been holidaying there for over 25 years it is near to where Mr B's parents live and I think a lovely part of the country for somewhere only 100 miles out of the centre of London it feels so much further.
If I know Eb's recipes the Spanish chicken will be very good.

Barcelona is one of the many places I would love to go. Your Suffolk cottage sounds wonderful, despite the necessary gardening. Our new house has a decent sized garden, which I'm loving, but it's been neglected for years. All I seem to have done over the last few months is pull brambles and ivy.

I have a lot of hedges and i always seem to be pulling out bramble and ivy my arms are always scratched after a weekend of gardening in Suffolk. Lol but I do enjoy it regardless. Have fun getting your new garden into shape.

I grew up in the country but I am very much a city girl now. I love London (and love the theatre) so would not move permanently to Suffolk but in London you dont get to appreciate the seasons in the same way as you do in the country side so it really is the best of both worlds.

I went to Barcelona about 12 years ago and had a fantastic time and your trips sounds brilliant. It must also be nice to be able to enjoy some time in Suffolk as bit of a break from London, especially as the weather is supposed to be nice this week! The chicken recipes all look delicious - I usually cook with chicken once or twice a week as everyone likes it so it's always good to have some inspiration, especially for easy midweek meals.
